I don't think you need to be a dragon knight to have a contract with a dragon. It's just that dragon knights feel a strong desire to have a contract with a dragon. Also I'm somewhat sure that it was me ruined in some of the earliest chapters that Yanxiao's father was a genius magician.

Shen Yu and Long Shi's contract is more like the contract between SYX and VB or Yang Xi and Azure Dragon. But, the contract between a dragon and dragon knight is a contract to be a mount beast. It's different.
