1. Shen Jiawei isn't a born undead nor a resurrected undead. He's a mixed-race experimental subjects. We don't know which class of undead his "donor" was was part of. But, SJW might still be slightly different to the "natural" undead. 2. Even when the blood wasn't pumped by heart, blood is liquid and it will seep out of wound (similar to how we can find blood seep out of chicken wings or legs if the butcher didn't drain its blood well when he butchered it). So, @Parleo 's idea seems unlikely to be applied to SJW and @Tazac SJW should be able to "bleed" if he still has blood in his vein. But honestly, I've already given up to make sense about the setting of the undead's body constitution. The author has changed it several times by now that I don't care anymore. Read more

Was it not stated earlie that undead did not have blood, look at sen juawo boy, when he proved to SY in Rising ity tha he was different. Overall, i think at he portrayl of the undead is poorly done and the undead arch is overly long. The elves arch was much better done.

This is just speculation, but perhaps there is a difference in the bodies between the pure undead and the resurrected? I imagine that because they are born they could potentially have a different body composition. Whereas a corpse that has been resurrected would not have blood flow because it’s already been dried out prior to coming back.
