In her undead form she can't use any of the other abilities. If that restriction works the other way she can't use death energy as a human/elf/dragon as she has invested a lot of time and effort on building those other skills I wouldn't want to give them up either therefore she chose to focus on building up physical skills that can be used in other forms rather than using a type of energy that is restricted to one form only. Remember she can use the other energies (dou qi, warlock, elven) in other forms except undead.

It'd be cool if she did and it would actually be very advantageous but she doesn't even know how to use death energy herself, which is suck a shame

When choosing new candidates she wanted ones with deep and concentrated death energy even if they didn’t have much of it. This is probably to make the energy concentrated for an explosive strike at the right time. I’m thinking they can use it, they just save it as a trump card.
