(I'm speculating) Maybe if the Sumibito cult discovers that Shiasha isn't human and begins persecuting her, the whole story could revolve around the battle to bring down the entire cult.

Given the twists and turns so far, I highly doubt it. This story does not seem to focus on a single arch nemesis and allies can be enemies next time, and that's what makes it good.

It might sounds crazy but I think those cultists might started preying Shiasha, a wish as the pinnacle of humanity. Or Witches might as a whole be descendants of ancient humans.

Quite possible. I feel like in terms of story it makes little sense for them to just withdraw given the commitments Shiasha has for her career.
